Chorizo Breakfast
Ingredients:
Olive oil
1/2 large onion, diced
3-4 Yukon Gold potatoes
1/2 (6oz) faux-chorizo link (Recommended: Trader Joe's Soy Chorizo)
Tortillas, warmed
Directions:
In a large pot, boil the potatoes until there is no resistance when pierced with a fork - approximately 20 minutes. Drain. Return to the pot and mash.
While the potatoes are boiling, sauté the onion in olive oil until the onions are translucent.
Add the chorizo in with the onions, mix well, and allow to heat through - approximately 1 minute.
Mix in the mashed potatoes, and mix until the potatoes are orange from the chorizo.
Served with warm tortillas.
*Tip: If the chorizo mixture ever looks dry, slowly mix in more olive oil until it has a moist appearance.
