Oatmeal Chocolate Chip Cookies
Prep time: 10 minutes | Cook time: 10 minutes | Total time: 20 minutes
Ingredients:
1 cup of non-dairy butter, softened (Recommended: Earth Balance)
1 cup of sugar
1 cup of brown sugar
4 tablespoons of water
2 tablespoons of flaxseed meal
2 large eggs worth of egg replacer (Recommended: Ener-G)
1 teaspoon of vanilla
1 teaspoon of salt
1 teaspoon of baking soda
3 cups of thick cut oats
1 cup of non-dairy chocolate chips (Recommended: SunSpire or Chocolate Dream)
2 cups of flour
Directions:
Preheat oven to 375 degrees (F).
Mix flaxseed meal and water - set aside for 3-5 minutes.
Beat together the Earth Balance butter and the sugars.
Add the Enger-G, flaxseed mixture, and vanilla. Mix until well blended.
In a separate bowl, sift together the flour, baking soda, and salt. Stir to combine.
Add the Earth Balance/flaxseed/sugar mixture to the dry ingredients. Mix well.
Add the oats. Mix.
Add the chocolate chips. Mix.
Bake for 8-10 minutes.
YIELD: 24 servings
