Pad Thai

Ingredients:
8 oz brown rice noodles
3 cups broccoli florets, steamed
4 tablespoon brown sugar
3 tablespoons fresh lime juice
4 tablespoons soy sauce
1 tablespoon canola oil
3 scallions, thinly sliced
1 garlic clove, minced
Chopped fresh cilantro, for garnish
Chopped roasted peanuts, for garnish
Directions:
Bring a large pot of water to a boil. Add noodles and cook according to package directions. Drain and set aside.
In a small bowl, whisk together brown sugar, lime juice, and soy sauce. In a large skillet, heat oil over medium-high heat. Add scallions and garlic and cook, stirring constantly, until fragrant. Add soy sauce mixture and noodles and broccoli to the skillet. Toss constantly until noodles and broccoli are coated with the sauce.
Garnish with cilantro and peanuts.
